These adorable bunnies are made with freshly brewed, fruity tea and the cutest ice cube tray you could ever find! Pop one into your glass and top with either sparkling water or clear soda, if you’re in the mood for something sweet!
I was inspired to make these when I saw the “Just Chill” iced tea set from David’s Tea advertised to me on Instagram! It’s a set with an entire rainbow of iced tea flavors, which is so fitting for pankobunny! Some of the teas in the set are sold out, but I’ve listed the teas that I used, as well as some substitution ideas, in the recipe card. - silicone rabbit mold – This is my FAVORITE mold ever! It’s such a great, substantial size and it’s fabulous quality. You can use it for frozen treats like these, or to make marshmallows or hot chocolate bombs!
- food coloring – For as long as I’ve made rainbow treats, I’ve been using Wilton Color Right food coloring to color them. It’s super pigmented, comes in very compact, clean little bottles and is so easy to use.
How to Make Rainbow Iced Tea Bunnies
Steep each flavor of tea in 1 cup of boiling water. Steep the tea about twice as long as you normally would. This will create a stronger flavor, which is necessary because it will dilute once we serve them with sparkling water or soda. Allow the tea to cool to room temperature.
Now to dye the tea! A drop of food coloring will go a very long way, so I recommend adding about ¼ drop at a time and adding more if you like. If you are using the same tea that I used, simply follow the guide below, adding a tiny drop of food coloring to each tea.
- Strawberry Lemonade (red)
- Watermelon Mint (orange)
- Peach Pucker (green)
- Guava Cadabra (blue)
- Maui Madness (purple)
- Rainbow Lemonade (pink)
If you are using different tea, use the natural colors of the tea to guide you. A pink/red tea can easily be dyed to look red, pink, purple or blue. Yellow teas can be colored to be orange, yellow or green!
Place a silicone mold with large cavities onto a small baking sheet. The baking sheet should easily fit into your freezer while staying flat. Fill each cavity with a different color of tea.
Place the mold and the baking sheet into the freezer and freeze overnight, until frozen solid. The tea that I used contains some sugar, so your ice cubes might be slightly sticky, but they will still freeze solid.
To serve, place one ice cube in a glass. Cover with about 1 cup of sparkling water or clear soda, depending on how sweet you’d like your tea to be. Watch your bunny swim in your glass and enjoy!
