Peanut Butter and Chocolate Rocky Road Fudge
In all honesty, I think that this is the yummiest thing to have ever come out of my kitchen! If you’re a fan of salty and sweet, then this is totally up your ally. The mix of the milk and dark chocolate add a lovely sweetness, and the melted peanut butter and salted peanuts add saltiness and a satisfying crunch. The marshmallows provide an amazing sticky, chewiness and I promise you that everyone will love you for making these! I actually used to work as a waitress in one of the Lindt cafes, and my recipe almost got taken up by the company and put into production to sell in stores. Yes, it’s THAT yummy. So now go and make them – you won’t regret it!!
Peanut Butter and Chocolate Rocky Road Fudge
Ingredients
- 500 g milk chocolate
- 300 g dark chocolate
- 250 g unsalted butter
- 8 tbsp golden syrup or corn syrup
- ½ cup peanut butter plus more for swirling on top
- 450 g salted peanuts
- 300 g mini marshmallows
Instructions
- Place the milk and dark chocolate, butter and golden syrup in a pot over medium-low heat. Stir consistently until completely melted. Add the peanut butter and mix until fully incorporated.
- Remove from the heat, and add the peanuts and marshmallows and mix until just combined. Pour the mixture into a square aluminum container, and swirl some peanut butter on top with a knife. Place this in the fridge (or freezer, if you’re in a rush) until set.
- Slice the rocky road into bite-sized squares, and you’re done!
