Glittery Cupcakes

Glittery Cupcakes

Ingredients

Cupcakes:

  • 2 cups all-purpose flour
  • 3 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup milk
  • ½ cup chocolate chips

Buttercream:

  • 2 cups unsalted butter room temperature
  • 1 tsp vanilla extract
  • 5 cups confectioner’s sugar
  • 2 tbsp white food colouring
  • edible glitter

Instructions

Bake the cupcakes:

  • Combine the flour, baking powder and salt. In a separate bowl, cream the butter and sugar with an electric mixer until pale and fluffy. Add the vanilla and eggs and beat until combined. Add the dry mixture in 2 additions, alternating with the milk. Add the chocolate chips and mix until evenly distributed.
  • Divide the batter into a cupcake tin lined with cupcake liners. To make it extra glitzy, you can use gold cupcake liners! Bake at 350F for 15-20 minutes, or until fully cooked. Transfer to a wire rack and cool completely.

Make the buttercream:

  • Cream the butter with an electric mixer until pale and fluffy. Add the vanilla extract and combine. Add the confectioner’s sugar one cup at a time, then beat for 3-5 minutes until fluffy. Add the white food colouring and mix until combine – this will create a brighter base for the glitter.

Decorate:

  • Spread some buttercream onto each cupcake and shape it into a round mound. Then dunk the cupcakes upside down into some edible glitter, fully coating the buttercream.
  • Place your cupcakes under a bright light and watch them sparkle!
