Ingredients

Variation 1:

  • 1 cup chopped red apple
  • 1 cup chopped green apple
  • 1 lb cream cheese room temperature
  • 1 ½ cups grated orange cheddar cheese
  • 1 ½ tsp maple syrup
  • 1 ½ cups pecans finely chopped

Variation 2:

  • 1 lb cream cheese room temperature
  • 2 cups grated orange cheddar cheese
  • 1 tbsp Dijon mustard
  • pinch black pepper
  • 1 cup pecans finely chopped

Variation 3:

  • 1 lb cream cheese room temperature
  • 1 cup grated cheddar cheese white and orange mix
  • 1 cup goat cheese room temperature
  • pinch black pepper
  • Prosciutto

Instructions

  • Mix the ingredients for each variation together.
  • Line a skull, brain or heart-shaped mold with prosciutto. Allow the excess prosciutto to hang off the edges. Press the prosciutto into as many crevices of the mold as possible.
  • Fill the molds with the cheese mixture, pressing it firmly into the mold. Fold the excess prosciutto on top of the cheese and smooth the surface.
  • Cover with plastic wrap and place something weighty on top, like a can. Place the mold in the fridge and chill overnight.
  • Carefully unmold the cheese balls and serve with crackers!
