Cinnamon Bun Doughnuts

Ingredients

Doughnut batter:

  • 3 tbsp unsalted butter melted
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup granulated sugar
  • 2 tbsp honey
  • 1 large egg
  • ½ tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/3 cup + 1 tbsp buttermilk
  • 1 tsp ground cinnamon
  • 3 tbsp brown sugar
  • 2 tbsp crushed pecans

Glaze:

  • 56 g cream cheese room temperature
  • 1/3 cup confectioner’s sugar
  • 1 tbsp milk

Instructions

  • Make the doughnuts: Whisk together the flour, baking powder, salt and cinnamon in a small bowl and set aside. In a large bowl, combine the butter, sugar, honey, egg and vanilla extract. Add the buttermilk and mix until combined. Add the dry ingredients and mix until just combined – make sure not to overmix. Transfer the batter to a piping bag. In a separate bowl, combine the ground cinnamon, brown sugar and crushed pecans.
  • Fill a greased doughnut pan halfway with the batter. Sprinkle the sugar mixture onto the doughnuts, then top with another layer of batter.
  • Bake at 400F for 7 minutes. Cool for 1 minute in the pan, then flip the pan over to remove the doughnuts and cool completely on a wire rack.
  • Make the glaze: Cream the cream cheese in a bowl with an electric mixer until fluffy. Add the confectioner’s sugar and milk and mix until combined. Dunk the doughnuts into the glaze and transfer to a wire rack. Enjoy!
