Cinnamon Bun Doughnuts
Ingredients
Doughnut batter:
- 3 tbsp unsalted butter melted
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ cup granulated sugar
- 2 tbsp honey
- 1 large egg
- ½ tsp vanilla extract
- 1 tsp ground cinnamon
- 1/3 cup + 1 tbsp buttermilk
- 1 tsp ground cinnamon
- 3 tbsp brown sugar
- 2 tbsp crushed pecans
Glaze:
- 56 g cream cheese room temperature
- 1/3 cup confectioner’s sugar
- 1 tbsp milk
Instructions
- Make the doughnuts: Whisk together the flour, baking powder, salt and cinnamon in a small bowl and set aside. In a large bowl, combine the butter, sugar, honey, egg and vanilla extract. Add the buttermilk and mix until combined. Add the dry ingredients and mix until just combined – make sure not to overmix. Transfer the batter to a piping bag. In a separate bowl, combine the ground cinnamon, brown sugar and crushed pecans.
- Fill a greased doughnut pan halfway with the batter. Sprinkle the sugar mixture onto the doughnuts, then top with another layer of batter.
- Bake at 400F for 7 minutes. Cool for 1 minute in the pan, then flip the pan over to remove the doughnuts and cool completely on a wire rack.
- Make the glaze: Cream the cream cheese in a bowl with an electric mixer until fluffy. Add the confectioner’s sugar and milk and mix until combined. Dunk the doughnuts into the glaze and transfer to a wire rack. Enjoy!
