Watermelon “Shaved Ice”
Ingredients
Watermelon Granita
- 5 g powdered gelatin
- 50 ml water
- 500 g watermelon from 1 small watermelon pureed in a blender (note: slice the watermelon in half, scoop out the flesh and save the rind for later)
- 80 g sugar
- 80 ml water
Honeydew Granita
- 5 g powdered gelatin
- 50 ml water
- 500 g honeydew melon pureed in a blender
- 80 g sugar
- 80 ml water
- 1 tbsp mini chocolate chips
Instructions
- For the watermelon granita, sprinkle the gelatin into 50ml water and set aside.
- Place the watermelon into a freezer bag and pour in the sugar and 80ml of water.
- Microwave the gelatin mixture from step 1 in the microwave for 30 seconds at 500W. Pour the mixture into the freezer bag and mix well. Repeat all steps to make the honeydew granita.
- Place the freezer bags into the freezer for 2-4 hours, kneading the bags occasionally until it develops the texture of granita.
- Divide the honeydew granita between the 2 hollowed out watermelon halves, then top with the watermelon granita. Sprinkle some mini chocolate chips on top and enjoy!
