For the watermelon granita, sprinkle the gelatin into 50ml water and set aside.
Place the watermelon into a freezer bag and pour in the sugar and 80ml of water.
Microwave the gelatin mixture from step 1 in the microwave for 30 seconds at 500W. Pour the mixture into the freezer bag and mix well. Repeat all steps to make the honeydew granita.
Place the freezer bags into the freezer for 2-4 hours, kneading the bags occasionally until it develops the texture of granita.
Divide the honeydew granita between the 2 hollowed out watermelon halves, then top with the watermelon granita. Sprinkle some mini chocolate chips on top and enjoy!
