Easy Roasted Potatoes

Crispy, fluffy potatoes in under an hour! This is my go-to side dish recipe and a great healthy alternative to french fries. RECIPE BELOW!

Ingredients

  • 2 pounds potatoes
  • 3-4 tbsp extra virgin olive oil
  • salt and pepper to taste
  • 1-2 tsp dry Italian seasoning or any seasoning you like! (mine contains dried tomatoes, garlic, onion, oregano, rosemary, basil, marjoram and dried olives)

Instructions

  • Wash the potatoes and cut into 1 ½ inch cubes. Place on a large baking sheet. Drizzle the olive oil on top and season with salt, pepper and Italian seasoning. Toss to fully coat the potatoes.
  • Bake at 400F for 45 minutes, until the potatoes are browned and blistered. Enjoy!
