Tea and Coffee Lollipops

Ingredients

Coffee Lollipops

  • 1 ¼ cups sugar
  • ½ cup boiling water
  • 1 tbsp instant coffee
  • 2 tbsp milk
  • ¾ cup corn syrup
  • lollipop sticks

Green Tea Lollipops

  • 1 ¼ cups sugar
  • ½ cup boiling water
  • 5 bags of green tea
  • ¾ cup corn syrup
  • lollipop sticks

Chai Lollipops

  • 1 ¼ cups sugar
  • ½ cup boiling water
  • 6 bags of chai tea
  • ¾ cup corn syrup
  • lollipop sticks

English Breakfast Tea Lollipops

  • 1 ¼ cups sugar
  • ½ cup boiling water
  • 5 bags of English Breakfast tea
  • ¾ cup corn syrup
  • lollipop sticks

Instructions

  • To make the Green Tea, Chai and English Breakfast Tea Lollipops, steep the tea bags in ½ cup of boiling water in a measuring cup for 15 minutes. The key is to make it taste as strong as possible, because it will be diluted when mixed with the other ingredients. Once they have steeped for 15 minutes, remove the tea bags, and top up the water back to the ½ cup mark, since the tea bags will have absorbed some of the water.
  • To make the Coffee Lollipops, dissolve 1 tbsp of instant coffee into ½ cup boiling water. Then remove 2 tbsp of the water, and replace with 2 tbsp of milk.
  • Pour the sugar, ½ cup of tea or coffee and corn syrup into a pot, and set it to medium heat. Stir with a rubber spatula until everything is melted and combined.
  • Then increase the heat to high, and attach a candy thermometer to the pot. Heat the sugar until it reaches 310F, stirring occasionally.
  • Pour the sugar mixture into a silicone mold of your choice. Then stick one lollipop stick into each shape, holding the stick in place until the candy fully sets. This will take around 15-20 minutes. Then gently unmold the lollipops from the mold.
