Mini Toast Appetizers

Ingredients

Ham and Egg Toasts

  • scrambled eggs made with 2 eggs
  • 8 small pieces of ham
  • ketchup
  • parsley
  • 8 pieces of melba toast

Caprese Toasts

  • basil pesto
  • 4 cherry tomatoes cut into quarters
  • 2-3 balls of bocconcini cheese thinly sliced into 8 slices in total
  • 8 small basil leaves
  • 8 pieces of melba toast

Shrimp and Avocado Toasts

  • 1 avocado diced
  • 2 tbsp mayonnaise
  • salt and pepper
  • lemon juice
  • 8 small cooked shrimp
  • 8 pieces of melba toast

Instructions

Ham and Egg Toasts

  • Place a piece of ham onto each toast, and top with a dollop of ketchup.
  • Spoon on some scrambled eggs and a small piece of parsley.

Caprese Toasts

  • Spread some basil pesto onto each piece of toast. Top with a slice of bocconcini cheese, a quarter of a tomato and a basil leaf.

Shrimp and Avocado Toasts

  • In a bowl, mix together the diced avocado, mayonnaise, salt, pepper and some lemon juice (to taste).
  • Spoon this onto the toasts and top with a shrimp.
