Ice Cream Truffles
Looking for a fresh new version of your favorite truffles to enjoy during the hot summer months? You just need to replace the ganache filling with ice cream, and you’ve got yourself a really yummy and refreshing summer snack that will still satisfy your chocolate cravings. I recommend using ice cream that is relatively dense, as it will hold its shape much longer than soft and airy ice creams.
Ice Cream Truffles
A really yummy and refreshing summer snack that will still satisfy your chocolate cravings!
Ingredients
- any flavor ice cream that you like I used chocolate and vanilla
- your desired toppings I used chopped pistachios, cocoa powder, and a strawberry yogurt Ritter Sport chocolate bar
Instructions
- Using a melon baller, scoop out balls of ice cream and lay them on a tray lined with parchment paper. Place these in the freezer for 30 minutes.
- Chop up your desired toppings using a food processor or just a knife.
- Pour your desired toppings into bowls, and roll the balls of ice cream into the topping, pressing lightly with your fingers to help the topping stick. Place these back into the freezer for an additional 30 minutes, and you’re done!
