Animal Crossing Nook Leaf Cookies

Animal Crossing Nook Leaf

Ingredients

  • 2 cups all-purpose flour
  • ¾ tsp salt
  • 1 cup unsalted butter room temperature
  • ½ cup confectioner’s sugar
  • 1 tsp vanilla extract
  • green food coloring

Instructions

  • Beat the butter with an electric mixer until pale and fluffy. Add the confectioner’s sugar and beat for 2 minutes, until well combined. Add the vanilla and combine. In a separate bowl, combine the flour and salt, then add to the butter mixture. Mix until the dough sticks together when pinched. Dye the dough green.
  • Place the dough between 2 sheets of parchment paper. Roll the dough out to ¼ – 1/2 inch-thick. Use a knife to cut out the leaf shapes, minus the stems and notches.
  • Gently remove the excess dough from around the cookies. Transfer the entire sheet of parchment paper, with the cookies, to a baking sheet. Use the excess dough to create the stems. Use a bottle cap, spoon or base of a piping tip to cut out notches from each cookie.
  • Bake the cookies at 325F for 13-15 minutes. Cool on the pan for 10 minutes, then transfer to a wire rack and cool completely. Enjoy!
