5 Cocktail Popsicle
Ingredients
Mimosa Popsicles
- fresh orange slices
- champagne
- orange juice
Pina Colada Popsicles
- 3 oz Malibu rum
- 3 tbsp coconut cream
- 3 tbsp canned pineapple chunks + extra
- 1 ½ cups coconut milk not coconut cream
Sangria Popsicles
- Ingredients
- 2 tbsp superfine sugar
- ½ cup water
- orange and lime slices
- ½ bottle approx. 375ml rose, red or white wine
- 3 oz sparkling water
- fresh strawberries and raspberries
Peach Bellini Popsicles
- 2 peaches cut into cubes (+ sliced peach, for garnish)
- 1 tbsp lemon juice
- 1 tsp sugar
- prosecco
Margarita Popsicles
- Ingredients
- 3 oz tequila
- 1 ½ oz Cointreau
- juice from 2 limes
- club soda
- lime slices
Instructions
Mimosa Popsicles
- Place orange slices into a popsicle mold. Fill them half way with champagne and top with orange juice.
- Insert popsicle sticks and place in the freezer until frozen solid, about 3-4 hours.
- Unmold the popsicles by running the popsicle mold under warm water – make sure not to get water INTO the mold!
- To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!
Pina Colada Popsicles
- Place all ingredients in a blender and pulse until smooth. Place the extra pineapple chunks into a popsicle mold and top with the mixture.
- Add popsicle sticks and place in the freezer until frozen solid, about 2-4 hours.
- Unmold the popsicles by running the popsicle mold under warm water – make sure not to get water INTO the mold!
- To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!
Sangria Popsicles
- Dissolve the superfine sugar in the water. Add the orange and lime slices, wine and sparkling water and mix well.
- Place the strawberries and raspberries into popsicle molds, then pour in the sangria. Insert popsicle sticks and place in the freezer until completely frozen, 3-4 hours.
- Unmold the popsicles by running the popsicle mold under warm water – make sure not to get water INTO the mold!
- To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!
Peach Bellini Popsicles
- Place the 2 peaches, lemon juice and sugar in a blender and pulse until smooth. Divide into popsicle molds, placing about 2 tbsp in each mold.
- Fill the molds the rest of the way with prosecco and add peach slices. Insert popsicle sticks and place in the freezer until frozen, 3-4 hours.
- Unmold the popsicles by running the popsicle mold under warm water – make sure not to get water INTO the mold!
- To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!
Margarita Popsicles
- Combine the tequila, Cointreau and lime juice in a bowl. Divide between a popsicle mold, then top with club soda. Add some fresh lime slices. Insert popsicle sticks and place in the freezer until frozen, about 3-4 hours.
- Unmold the popsicles by running the popsicle mold under warm water – make sure not to get water INTO the mold!
- To store, wrap each popsicle in wax paper and place them in a freezer bag. Store in the freezer and enjoy whenever you like!
