Watermelon Ice Cubes
Ingredients
- 1 cup fresh watermelon cut into cubes
- 1 cup lemon lime soda
- ¼ cup coconut milk not cream
- 2 tbsp water
- ¼ cup honeydew melon cut into cubes
- 2 tbsp water
Instructions
- Place the watermelon and lemon lime soda in a blender and pulse until smooth. Fill an ice cube tray ¾ of the way full, then place in the freezer until frozen, 2-3 hours.
- Combine the coconut milk and water. Pour on top of the watermelon ice cubes, filling the remaining space half way. Return to the freezer until frozen, about 1 hour.
- Place the honeydew melon and water in a blender and pulse until smooth. Fill the ice cube tray the remainder of the way full, return to the freezer and freeze until frozen, about 1-2 hours.
- Serve with soda or sparkling water for a light, fruity drink!
