Waffle Cone Parfaits

These were made in celebration of International Waffle Day on March 25th! These cones are filled with yogurt and a variety of fruit, and make a wonderful grab and go breakfast! Because of the yogurt, the cones do get soggy after sitting for a while, so I recommend consuming them soon after assembling them. They could also be a cute, healthy dessert to take on an after dinner walk with your significant other.

Waffle Cone Parfaits

These cones are filled with yogurt and a variety of fruit, and make a wonderful grab and go breakfast!
Servings 1 each

Ingredients

Berry Parfait

  • your choice of berries: strawberries raspberries, blueberries, blackberries etc.
  • plain Greek yogurt
  • strawberry jam
  • 1 waffle cone

Apple Cinnamon Parfait

  • ¼ of an apple thinly sliced
  • lemon juice
  • walnuts
  • plain Greek yogurt
  • cinnamon
  • honey
  • 1 waffle cone

Fruit Salad Parfait

  • strawberries sliced
  • ¼ banana
  • kiwi berries or sliced kiwi fruit
  • canned mandarin oranges
  • plain Greek yogurt
  • corn flakes
  • 1 waffle cone

Instructions

Berry Parfait

  • Cut the top off of one strawberry, and place it in the bottom of the cone. Mix some Greek yogurt with a small dollop of strawberry jam, then spoon it into the cone. Decorate with your choice of berries.

Apple Cinnamon Parfait

  • Squeeze some lemon juice onto the apple slices to prevent browning, and place some walnuts in the bottom of the waffle cone. Add some honey and cinnamon to the Greek yogurt, and mix well to dissolve the cinnamon. Spoon the yogurt into the cone, then decorate with the sliced apples and additional walnuts.

Fruit Salad Parfait

  • Place some corn flakes in the bottom of the cone. Mix together a small amount of syrup from the mandarin oranges with the yogurt to add a delicate, sweet flavor. Spoon some yogurt into the cone, then decorate with the strawberries, banana, kiwi and mandarin oranges. You can also decorate it with some extra corn flakes.
