Pancake Mug Cakes
Ingredients
- 1 cup cake flour
- 1/3 cup + 1 tbsp sugar
- pinch of salt
- 2 tbsp skim milk powder
- 2 tsp baking powder
- 1 scant tbsp cornstarch
- 2 eggs
- 3 tbsp vegetable oil
- ½ cup milk
- 2-3 squares of butter
- maple syrup
Instructions
- Place all of the ingredients, except for the butter and maple syrup, into a bowl and whisk everything together.
- Pour this mixture about half way up 2-3 microwave-safe mugs, and then microwave them individually for 1 minute and 30 seconds, or until the pancakes have risen and are fluffy and airy.
- Top each pancake with a square of butter and drizzle some maple syrup on top, and enjoy!
