Pancake Mug Cakes

Ingredients

  • 1 cup cake flour
  • 1/3 cup + 1 tbsp sugar
  • pinch of salt
  • 2 tbsp skim milk powder
  • 2 tsp baking powder
  • 1 scant tbsp cornstarch
  • 2 eggs
  • 3 tbsp vegetable oil
  • ½ cup milk
  • 2-3 squares of butter
  • maple syrup

Instructions

  • Place all of the ingredients, except for the butter and maple syrup, into a bowl and whisk everything together.
  • Pour this mixture about half way up 2-3 microwave-safe mugs, and then microwave them individually for 1 minute and 30 seconds, or until the pancakes have risen and are fluffy and airy.
  • Top each pancake with a square of butter and drizzle some maple syrup on top, and enjoy!
