Lychee Bubble Tea
Ingredients
- 500 ml hot water
- 2 green tea bags
- 24 canned lychees in syrup reserve syrup
- 2 cups milk
- ¼ cup lychee syrup from can
- ½ cup tapioca pearls
- 2 tbsp brown sugar
- 1/2 cup lychee syrup from can
Instructions
- Steep the 2 green tea bags in the hot water for 3-4 minutes. Chill in the fridge until needed.
- Bring a large pot of water to boil. Add the tapioca pearls and cook according to the package.
- In a small pot, whisk together the brown sugar and lychee syrup. Set to medium heat and cook until it starts to bubble. It should still be liquidy.
- Place the lychees in a blender and pulse until they are as smooth as possible. Strain the lychees through a mesh sieve to remove any remaining pulp. If you don’t mind texture in your bubble tea, you can omit this step! Add the milk to the lychee juice and mix well.
- To serve, divide the tapioca, brown sugar syrup and 120ml lychee syrup between two tall glasses. Stir to coat the tapioca. Divide the lychee milk between the glasses, then top with the green tea. Add a bubble tea straw, give it a stir and enjoy!
