Add some extra creaminess to your usual eggnog by adding ice cream! This of course isn’t the healthiest drink in the world, but the ice cream give the eggnog a wonderful, smooth creaminess that pairs amazingly well with the light rumminess. This eggnog has a very delicate flavour, but you are more than welcome to add more rum if you feel that it is too mild.
- 8 eggs separated
- 2/3 cup sugar
- 12 tbsp rum or bourbon
- 6 cups skim milk
- 2 tsp ground nutmeg
- vanilla ice cream
- 12 cinnamon sticks
- Beat the egg yolks until lightened, and then add the sugar to the eggs and mix until dissolved. Add the milk, rum and nutmeg.
- Beat the egg whites until they form stiff peaks, and then add to the liquid mixture.
- Chill in the fridge until the eggnog is nice and cold.
- Pour into glasses, and top with a scoop of vanilla ice cream. Then sprinkle with nutmeg and decorate with a cinnamon stick.
