Fresh Chicken Salad
I first came up with this salad when I was trying to empty my fridge. It was a “Meh, let’s just add this because it’ll go old soon” kind of process, and it turned into something SO yummy, and is now my absolute favorite salad ever. I don’t even like salads, but this one is so fresh and crunchy, but most importantly – it’s filling. It’s not just leaves thrown into a bowl that are expected to make you full (my perception of salads). It does seem like a lot of vinegar for the dressing, but white wine vinegar isn’t AS acidic, and it just adds a lovely sense of freshness to the salad. It isn’t overpowering at all, but feel free to gradually add the dressing and adjust to your taste.
Fresh Chicken Salad
Ingredients
- meat from 1 whole roasted chicken shredded
- 2 heads mini romaine lettuce
- 1 cucumber
- 1 carrot
- 1/2 red bell pepper
- 1/2 cup white wine vinegar
- 4 tsp sugar
Instructions
- Place the shredded chicken in a big bowl. Slice the cucumber in half lengthwise, then slice it very thinly. Slice the bell pepper into 1-2 inch-long strips, and grate the carrot. Add these into the bowl as well. Roughly tear the lettuce and add to the bowl.
- In a small bowl, add the sugar to the vinegar, and mix well until the sugar dissolves. Pour the dressing onto the salad and mix well until the vegetables have absorbed the dressing and look a little bit damp. And serve!
