Christmas Light Oreo Truffles

These truffles taste like oreo cheesecake – they are fabulous. We’re rolling them in colored sugar to make them sparkle just like real Christmas tree lights!

Ingredients (makes 9-10 truffles)

  • 2 cups oreo cookie crumbs
  • 250g cream cheese, room temperature
  • 2 cups each pink, blue and yellow candy melts, melted
  • 1 cup each pink, blue and yellow sanding sugar
  • 9-10 mini chocolate peanut butter cups
  • silver edible metallic spray

Directions

  1. Place the oreo cookie crumbs and cream cheese in a bowl and beat with an electric mixer until fully combined.
  2. Divide the mixture into 9-10 pieces and shape into Christmas light shapes. Place them on a plate lined with plastic wrap and refrigerate until firm, about 1 hour.
  3. Place the peanut butter cups on a sheet of parchment paper, with the largest side facing down. Spray all over with silver edible metallic spray. Set aside.
  4. To add the coating to the truffles, place a truffle on a fork and submerge it in one color of the melted candy melts. Allow the excess candy melts to drip off, then roll in the coordinating sugar. It may take a few minutes for the candy melts to set, so keep the truffle in the bowl of sprinkles until the candy melt coating feels stiff. Repeat with the remaining truffles.
  5. Dip the base of the peanut butter cups into some extra melted candy melts and stick one on each truffle.
