Happy Christmas Eve! Still running around trying to fill stockings? I feel you. Here are 10 treats that are EASY and QUICK! To be safe, I recommend gifting these within your quarantine bubble just to be certain that everyone stays healthy and safe.

Ingredients

Homemade Dulce de Leche Recipe:

  • 1 unopened can of full fat sweetened condensed milk

Hot Chocolate Pigs Recipe:

  • one 100g chocolate bar any flavor
  • 2 tbsp marshmallow bits
  • Festive sprinkles
  • marshmallow bits

Gummy Bear Gift Jars:

  • 2 lbs gummy bears

Homemade Tomato Sauce Recipe:

  • 16 lbs plum tomatoes
  • ¼ cup freshly squeezed lemon juice from about 3 lemons
  • 2 tsp salt

Homemade Pesto Recipe:

  • ½ cup pine nuts
  • 5 cups fresh basil leaves
  • ½ cup grated parmesan cheese plus extra for garnishing
  • ¼ cup grated pecorino romano cheese
  • 1 clove garlic peeled
  • ¼ tsp salt
  • ¾ cup good quality extra virgin olive oil plus extra for garnishing

Homemade Chili Oil Recipe:

  • 1 cup extra virgin olive oil
  • 1/3 cup dried chili peppers

Vanilla Extract Recipe:

  • 1 cup 80 proof vodka or bourbon, brandy, or rum – whichever you like!
  • 5-6 dried vanilla beans

Peppermint Extract Recipe:

  • 1 cup vodka
  • ½ - ¾ cup fresh mint leaves washed and dried

Gingerbread Spice Mix Recipe:

  • 1 tbsp + 1 tsp ground cinnamon
  • 1 tbsp ground allspice
  • 1 tbsp ground ginger
  • 1 ½ tsp ground nutmeg
  • 1 ½ tsp ground cloves

Instructions

Homemade Dulce de Leche Recipe

  • Place the unopened can of condensed milk into a large pot and fully submerge with water.
  • Set the pot to high heat and boil for 3 hours. Keep an eye on the pot and top up with more water if needed.
  • Once 3 hours has passed, remove the can from the pot with tongs and allow it to cool completely.
  • Open the can and see your homemade dulce de leche inside!

Hot Chocolate Pigs Recipe

  • Place the chocolate in a microwave-safe bowl and microwave for 20-30 second intervals until melted, stirring at each interval.
  • Pour the chocolate into a silicone mold. Top the chocolates with 2 tbsp of marshmallow bits. Gently press the marshmallow bits into the chocolate, so that they stick.
  • Place the mold in the fridge for 30 minutes, until the chocolate has set.
  • Fill cellophane bags with a scoop of sprinkles and a scoop of marshmallow bits, then top with some chocolate pigs. Tie the bags closed and enjoy!

Gummy Bear Gift Jars:

  • Divide the gummy bears up by color.
  • Layer them into the jar in the order of the rainbow, or any pattern you like! Make sure that each layer is scattered right to the edge of the jar. This will make it look the prettiest from the outside.
  • Seal and enjoy!

Homemade Tomato Sauce Recipe:

  • Peel the tomatoes. I like to use a serrated vegetable peeler, which makes it much easier to peel the tomatoes and eliminates the need to boil them to remove the peel.
  • Place the tomatoes into a large pot and set to medium heat. Cook for 1-3 hours until your desired consistency is reached. I cooked mine for 3 hours, until you can see the bottom of the pan when stirring.
  • Add the lemon juice and salt and mix well.
  • Allow the sauce to cool, then place into jars.

Homemade Pesto Recipe:

  • Place the pine nuts, basil leaves, parmesan cheese, pecorino cheese, the garlic clove and salt in a blender and pulse until you create a paste.
  • Gradually add the olive oil about 2 tbsp at a time, pulsing with each addition.
  • Spoon into jars.

Homemade Chili Oil Recipe:

  • Remove the stems from the chili pepper and use scissors to roughly cut them into pieces. You don’t have to be too exact.
  • Place the chili pieces, including the seeds, into a jar and add the olive oil.
  • Sore in a cool, dry place for at least 3-4 weeks to fully infuse the chilis into the oil. Shake the bottle about once a week.

Vanilla Extract Recipe:

  • Slice the vanilla beans down the center with a sharp knife. You don’t need to split them open, just make sure the knife pieces the skin.
  • Place the vanilla beans into a jar. If they are too tall for the jar, slice them in half lengthwise.
  • Fill with vodka, making sure to fully submerge the beans. They will get a little slimy if not fully submerged.
  • Store in a cool, dry place for 8 weeks – 6 months, until the extract is at its optimal flavor. Shake the bottle about once a week.
  • The extract can be topped up with more vodka as you use it. Just make sure that the beans are always submerged. It should last several years!

Peppermint Extract Recipe:

  • Place the mint leaves into a jar. Pour the vodka on top.
  • Seal and shake the jar a couple times. Add more vodka if necessary.
  • Store in a cool, dry place for about 8 weeks. Shake the bottle about once a week.

Gingerbread Spice Mix Recipe:

  • Combine all the spices in a bowl. Then divide between jars.
