Easter Scrambled Eggs

Welcome spring and Easter into your brunch with these scrambled eggs, with double the eggs! Little colorful quail eggs decorate the creamy yellow eggs and add a beautiful seasonal touch!

Ingredients

  • 2 eggs
  • 1/3 cup milk
  • 1-2 tsp dried chives
  • salt and pepper
  • olive oil
  • 6 hard-boiled quail eggs
  • food coloring

Instructions

  • Dye the quail eggs your desired colors. Drop some food coloring into glasses, and then fill them with water. Adding lots of food coloring will make the color stick to the eggs faster. Today I used pink, orange, yellow, green, blue and purple food coloring.
  • Beat the chicken eggs, season with salt and pepper, and add the milk and chives. Whisk the eggs very well.
  • Drizzle some olive oil onto a frying pan set to medium heat, and add the beaten egg mixture. Scramble the eggs with a spatula, and when the eggs have become fluffy but are still shiny, place them onto a plate. Top with the quail eggs, and you’re done!
