Baked Potato Nests

These would be a lovely addition to your Easter brunch, and will welcome the Spring into your day!

Ingredients

  • 7 small-medium half-baked potatoes
  • 2 tsp dried chives
  • salt and pepper to taste
  • cooking spray
  • 36 hard-boiled quail eggs
  • blue food coloring
  • 3/4 cup sour cream

Instructions

  • Prep: Both the potatoes and quail eggs can be prepared the night before in advance. To achieve half-baked potatoes, bake the potatoes at 400F for an hour or less until they are almost cooked through, but are still slightly crunchy in the middle. Place these in the fridge and allow to cool overnight.
  • To boil the quail eggs, place the eggs in a pot of cold water, and bring to a boil. Boil for 3-4 minutes, then remove from the heat, and allow to sit in the water for 3 more minutes. Rinse them in cold water, then peel.
  • For a quick way to dye the eggs, pour about 1-2 tsp of blue food coloring in a glass, and fill halfway with water. Add the quail eggs, and wait about 30 seconds. Because of the large amount of food coloring, they’ll turn blue right away!
  • Peel the potatoes, and grate on the largest holes of a cheese grater. Mix together with the chives, salt and pepper. Spray a muffin tin with cooking spray, and spoon the potatoes inside. Fill the cups quite full, so that the base and the walls are quite thick, and the potatoes are spilling out over the cups. Spray once more with cooking spray, and bake at 425F for 20-30 minutes, until golden brown.
  • Allow them to slightly cool, then spoon in some sour cream and arrange 3 quail eggs inside each nest.
