Apple-Shaped Pumpkin Croquettes

Pumpkin, cheese and pork croquettes shaped like apples! Perfect for the fall.

Ingredients

  • 1/4 small pumpkin kabocha squash
  • 1/4 onion
  • 100 g ground pork
  • 1/2 cup shredded cheese
  • 1/5 tsp salt
  • sprinkle of pepper
  • 2 tsp butter
  • flour
  • 1 beaten egg
  • panko bread crumbs
  • oil for frying
  • 8 leaf-shaped food picks or 8 toothpicks and red or green patterned masking tape

Instructions

  • Remove the skin from the pumpkin, and cut it into bite-sized pieces. Place in a microwave-safe bowl, cover with plastic wrap, and microwave for 6 – 7 minutes. Then, mash the pumpkin with a fork while it is still warm.
  • Melt the butter in a frying pan, while finely dicing the onion. Add the onion and the ground pork to the pan, and sauté until the pork is fully cooked. Season with salt and pepper, mix together with the pumpkin, and allow to cool.
  • Divide the filling into 8 balls, and stuff the balls with the shredded cheese. Coat the balls in flour, egg, then roll in panko. Fry in oil at 340F until cooked.
  • If you do not have leaf-shaped food picks, fold a 2 inch long piece of masking tape in half around the top of a toothpick, making a flag-like pick. Trim the masking tape into the shape of a leaf, and repeat for all 8 toothpicks. Then stick the toothpicks into the top of the croquettes, and your apple-shaped croquettes are finished!
