To cook the tapioca, pour the tapioca into boiling water. Boil, uncovered, for 40 minutes. Remove from the heat, place a lid on the pot and let sit for 20 minutes. Drain and coat lightly in honey.
To make the slushie, choose your desired flavour and blend all ingredients in a blender until smooth. For the matcha green tea flavour, dissolve the matcha powder in the warm milk, then add this to the blender.
Spoon some tapioca into the bottom of a tall glass and top with your smoothie. Add a bubble tea straw and enjoy!
