Beat the butter with an electric mixer until pale and fluffy. Add the confectioner’s sugar and beat for 2 minutes, until well combined. Add the vanilla and combine. In a separate bowl, combine the flour and salt, then add to the butter mixture. Mix until the dough sticks together when pinched. Dye the dough green.
Place the dough between 2 sheets of parchment paper. Roll the dough out to ¼ - 1/2 inch-thick. Use a knife to cut out the leaf shapes, minus the stems and notches.
Gently remove the excess dough from around the cookies. Transfer the entire sheet of parchment paper, with the cookies, to a baking sheet. Use the excess dough to create the stems. Use a bottle cap, spoon or base of a piping tip to cut out notches from each cookie.
Bake the cookies at 325F for 13-15 minutes. Cool on the pan for 10 minutes, then transfer to a wire rack and cool completely. Enjoy!
