Tiger King Cupcakes

Ingredients

Cupcake batter:

  • half quantity of Vanilla Cake Recipe here: https://youtu.be/9QyEeNkdaYw
  • 1 tbsp natural orange flavoring
  • black and orange food coloring

Buttercream:

  • 2 cups unsalted butter room temperature
  • 1 tsp vanilla extract or seeds from 1 vanilla bean
  • 5 cups confectioner’s sugar

Instructions

Bake the cupcakes:

  • Beat the butter and sugar with an electric mixer until pale and smooth. Add the vanilla extract, orange extract and eggs one at a time, mixing with each addition.
  • In a separate bowl, combine the flour, baking soda and salt. Add this to the batter in 2 additions, alternating with the sour cream.
  • Divide the batter into 2 bowls. Dye one bowl black and the other orange.
  • Line a cupcake pan with orange cupcake liners. Place dollops of batter into the cupcake pan, alternating between orange and black batter within each cupcake cup. Make sure to place each dollop directly on top of the bottom dollop. Bake at 350F for 15-20 minutes. Cool completely.

Make the buttercream:

  • Beat the butter with an electric mixer until pale and fluffy. Add the vanilla extract and confectioner’s sugar one cup at a time, beating with each addition.
  • Place about 2 tbsp of buttercream in a small bowl and dye it blue. Divide the remaining buttercream evenly into 7 bowls. Dye it peach, white, orange, yellow, black, grey and brown.

To make Joe Exotic:

  • Spread some peach buttercream all over the surface of the cupcake.
  • Place the grey and yellow buttercream into piping bags fitted with medium sized, round piping tips. Pipe Joe Exotic’s sideburns with the grey buttercream and bangs and bottom of his mullet with the yellow buttercream.
  • Use 2 chocolate chips as his eyes.
  • Place the brown buttercream into a piping bag fitted with a small/medium-sized round piping tip. Pipe his handlebar moustache and eyebrows.
  • Place the black buttercream into a piping bag fitted with a small, round piping tip. Pipe his mouth, earrings and eyebrow ring.

To make Carole Baskin:

  • Spread some peach buttercream all over the surface of the cupcake.
  • Place the yellow buttercream into a piping bag fitted with a medium sized, round piping tip. Pipe Carole’s wavy hair.
  • Use flower sprinkles to create her flower crown, chocolate chips for her eyes and lips sprinkle for her mouth.

To make a tiger:

  • Place the orange and black buttercream into piping bags fitted with small, star-shaped piping tips. Pipe orange stars all over the surface of the cupcake. Pipe 2 ears with the orange buttercream by slowly extending the piping bag away from the cupcake, forming a triangle. Pipe black stripes onto the cupcake with the black buttercream.
  • Use 2 chocolate chips as the eyes. Place the white buttercream into a piping bag fitted with a medium-sized round piping tip. Pipe the tiger’s cheeks.
  • Use the black buttercream to create the tiger’s nose.

To make Doc Antle:

  • Spread some peach buttercream all over the surface of the cupcake.
  • Place the grey buttercream into a piping bag fitted with a small/medium sized, round piping tip. Pipe his ponytail and beard.
  • Use 2 chocolate chips as his eyes. Place the black buttercream into a piping bag fitted with a small, round piping tip. Pipe his mouth and earrings.

To create the tiger stripe cupcake:

  • Spread some white, yellow and orange buttercream onto a cupcake. Smooth it with a spatula to create an ombre pattern.
  • Place the black buttercream into a piping bag fitted with a medium-sized, round piping tip. Pipe tiger stripes onto the cupcake and gently smudge them with a spatula.
  • Place the blue buttercream into a piping bag fitted with a small, round piping tip. Pipe “Hey all you cool cats and kittens” onto the cupcake.

To make Jeff Lowe:

  • Spread some peach buttercream all over the surface of the cupcake.
  • Place the grey buttercream into a piping bag fitted with a small/medium sized, round piping tip. Pipe his sideburns.
  • Spread the black buttercream onto the top of the cupcake, creating his bandana. Spread some white buttercream onto the bandana and smudge it a little bit.
  • Use 2 chocolate chips as his eyes. Use some more grey buttercream for his beard and moustache.
  • Place the black buttercream into a piping bag fitted with a small, round piping tip. Pipe his smile.
