Evergreen Shortbread Cookies

  • Beat the butter with an electric mixer until pale and fluffy. Add the confectioner’s sugar and beat for 2 minutes, until well combined. Add the vanilla and combine. In a separate bowl, combine the flour and salt, then add to the butter mixture. Mix until the dough sticks together when pinched.
  • Set aside ¼ of dough. Dye the remaining dough pale green. Set aside 1/3 of the dough. Add a few more drops of green food coloring to the dough and knead together. Set aside ½ of the dough. Add a few more drops of green food coloring to the remaining dough and knead.
  • Roll each ball of dough into a sausage and arrange in an ombre pattern on a floured surface. Ideally, you want each sausage to be smaller than the size of your cookie cutter, so that multiple colors will be included in each cookie. If your work surface is too small, cut the sausages in half length-wise and continue the ombre pattern below the other sausages.
  • Cover with a sheet of parchment paper. Roll a rolling pin on top to smooth the dough and blend all the sausages together. Use a tree-shaped cookie cutter or pie stamper to cut out trees. Place them on a baking sheet lined with parchment paper.
  • Bake at 325F for 10 minutes, or until the edges are just starting to brown. Cool on the pan for 10 minutes, then transfer to a wire rack and cool completely. Enjoy!
