Place all of the ingredients, except for the butter and maple syrup, into a bowl and whisk everything together.
Pour this mixture about half way up 2-3 microwave-safe mugs, and then microwave them individually for 1 minute and 30 seconds, or until the pancakes have risen and are fluffy and airy.
Top each pancake with a square of butter and drizzle some maple syrup on top, and enjoy!
