Mandarin Orange Candy Cubes | キューブ形のみかんのグミ

These gummies taste like summer! Imagine citrusy gummy bears filled with juicy mandarin oranges, and you’ll have these! Most of the sweetness comes from the juice and the fruit itself, so these are incredibly refreshing to nibble on while enjoying the heat of summer. Biting into the center of these gummies will release the juiciness of the oranges and boy, are they delicious! If you’re heading to the beach with friends this summer and are looking for a snack to bring along, these would be amazing! They won’t make you feel bloated like candy or chips, and are so bouncy and easily fit into any container. If you’re looking for a drink to bring along as well, you should definitely try out my Citrus-Infused Water (recipe here)! It’s filled with oranges, lemons, limes and grapefruit and pairs perfectly with the delicate citrus flavour of these gummies!

❤ ½ cup peach, mango, orange juice
❤ 1 cup water
❤ 1 ½ tbsp sugar
❤ 4 tbsp gelatin
❤ 8 mandarin orange segments, sliced in half widthwise

1. Pour the juice, water and sugar into a pot and bring to a boil. Once the sugar has fully dissolved, gradually whisk in the gelatin, making sure to mix well after each addition to prevent lump
2. Pour the mixture into a cube-shaped silicone mold, only filling each cube halfway. Transfer the mold to the fridge and allow the jelly to partially set, about 15 minutes.
3. Remove the mold from the fridge and place one piece of mandarin orange into each cube, pressing down slightly into the jelly. Then top with the remaining jelly mixture and return to the fridge for a final time to set, about 30 minutes.
