Holiday Cheese Fondue | チーズのフォンデュ

This fondue tastes like a mix of traditional fondue and grilled cheese, because of the addition of white cheddar! Cheddar makes this fondue slightly more mild, and is perfect for younger children or those who aren’t huge fans of strong cheese. But even if you are, this tastes amazing – familiar because of the cheddar, but still very much like Swiss fondue.
Me and my lovely friend Julie Nolke from Feeling Peckish teamed up to create an apres ski-themed meal for you guys! We went skating in the morning of the day that we were shooting this, and the cheese fondue was the PERFECT treat to come home to! The links to all of her recipes are below!
Tip: I made this the night before so that I wouldn’t be scrambling that day, and it really made things run smoothly. To do this, just pour the fondue into a tupperware container after adding and mixing in the nutmeg and pepper, allow it to come to room temperature with the lid off, and then place the lid of top and pop it in the fridge! Then just reheat it on high in the microwave for about 40 seconds until it’s bubbling, whisk together any wine and cheese that has separated, and pour it into your prepared fondue pot!

Ingredients (serves 3-4)
❤ 1 1/2 cups emmental cheese, grated
❤ 2 cups gruyere cheese, grated
❤ ½ cup white cheddar, grated
❤ 1 garlic clove, sliced in half
❤ 1 ½ cups of apple cider or dry white wine, like Sauvignon Blanc
❤ 2 tsp water
❤ 1 tbsp cornstarch
❤ juice from ¼ lemon
❤ grated nutmeg
❤ freshly ground pepper

1. Prepare the pot that you will be using for your fondue. If your fondue pot won’t fit this much cheese like mine, then make the fondue in a separate pot, and then pour it into your fondue pot when you are ready to serve it! Rub the garlic clove on the inside of the pot that you will be cooking with.
2. Pour the cider or wine into the pot, and set to medium heat. Bring this to just a simmer.
3. In a separate bowl, mix together the water and cornstarch.
4. Gradually add the cheeses to the pot, stirring until fully melted and creamy. Add the cornstarch mixture and mix well. Bring the cheese to a simmer and cook for 5-8 minutes, until thickened. Season it with nutmeg and pepper.
5. Pour this into a fondue pot, and serve with crusty bread, apple, pear, cauliflower, broccoli, baby carrots or mushrooms.

❤ アップルサイダー、またはソーヴィニヨン・ブランのようなドライの白ワイン 1.5カップ
❤ 水 小さじ2
❤ コーンスターチ 大さじ1
❤ レモン汁 1/4個分
❤ ナツメグ 少々
❤ こしょう 適量
