Fidget Spinner Cookies |

Ingredients (makes 10-12 cookies)

Cookie dough:
2 cups flour
¼ tsp salt
½ tsp baking powder
½ cup unsalted butter
1 cup sugar
1 egg
2 tbsp milk
½ tsp vanilla extract

Royal Icing:
½ lb confectioner’s sugar
2 ½ tbsp meringue powder
scant ¼ cup water
food colouring

Red licorice, or any firm candy

Make the Cookies:
1. Mix together the flour, salt and baking powder in a bowl. In a separate bowl, cream the butter and sugar with an electric mixer until it becomes light and fluffy. Add the milk, egg and vanilla and mix well. Then slowly add the flour mixture until it is just combined.
2. Shape the dough into a ball, then divide it into two balls. Wrap them in plastic wrap and place in the refrigerator for 1 hour.
3. Lightly dust some flour onto your countertop, and roll the dough out until it is ¼ inch thick. Use a fidget-spinner shaped stencil (or an actual fidget spinner!) as a guide to cut out cookies with a sharp knife. Then cut out small circles that will be the grip area of the fidget spinners. You will need 2 circles per fidget spinner cookie. Place these on a baking sheet lined with parchment paper. Cut holes into the center of each fidget spinner with a sharp knife.
4. Bake for about 10 minutes at 350F, until lightly golden. Transfer these to cooling racks and allow to fully cool.

Make the royal icing:
1. Combine the confectioner’s sugar and meringue powder in a large bowl. Add the water and beat for 7 minutes, until it is smooth and when drizzled, stays on the surface for a few seconds.
2. Divide into as many bowls as you like – each fidget spinner uses 2 shades of icing.
3. Place the icing into piping bags fitted with small, round piping tips.

1. Pipe a border around the fidget spinner cookies and half of the circle cookies with one shade of icing.
2. Fill in the center space with another shade of icing. Allow these to dry until hard to the touch, about 1-2 hours.
3. Trim the licorice or candy so that it fits through the hole in the fidget spinners, then make tiny slices in both ends, to create texture. Place an un-iced circle cookie face down and place the fidget spinner on top, positioning it so that the hole is directly above the circle cookie. Pipe a dollop of icing through the hole, onto the circle cookie, and stick the licorice into the icing. Trim the licorice so that it extends just past the fidget spinner cookie. Place another dollop of icing on top of the licorice and stick a decorated circle cookie on top. The texture on the ends of the licorice will help it stick to the icing. Be sure not to get icing on the fidget spinner. Pipe circular decorations on the fidget spinners. Allow the icing to harden for about 1 hour.
4. Enjoy your fidget spinner cookies! Note: While these do work, they are much more fragile than regular fidget spinners, so we recommend spinning them gently.
