Chicken Teriyaki Meatball Skewers | 照り焼きの鶏つくね

Ingredients (makes 3 of each flavour)
❤ ½ onion, minced
❤ 400g ground chicken
❤ large pinch of salt
❤ 6 tbsp panko bread crumbs
❤ 1 beaten egg
❤ ½ tsp grated ginger
❤ 3 tbsp sake
❤ 3 tbsp soy sauce
❤ 2 tbsp mirin
❤ 2 tsp sugar

Shiso Chicken Skewers:
❤ 6 shisho (perilla) leaves
❤ 1 tsp sesame oil
❤ 3 bamboo skewers

Edamame and Corn Skewers:
❤ 3 tbsp edamame
❤ 3 tbsp frozen corn, defrosted
❤ 1 tsp sesame oil

Spicy Skewers:
❤ 1 tsp sesame oil
❤ ½ tbsp gochujang paste
❤ 1 tbsp mayonnaise
❤ green onion, finely chopped

Directions
1. Place the onion in a bowl and microwave for 1 ½ minutes. Let cool.
2. Place the ground chicken and salt in a bowl and knead together. Add the panko bread crumbs, beaten egg and ginger juice and mix well. Add the onion and combine.
3. Divide the mixture into 3 portions, and follow the steps below to make each flavour.
4. Combine the sake, soy sauce, mirin and sugar and set aside. This will be the glaze for the skewers.

Shiso Chicken Skewers:
1. Divide 1/3 of the meat mixture into 6 pieces and shape into nuggets. Wrap the shisho (perilla) leaves around each meatball and gently press to stick the leaf to the meat.
2. Warm the sesame oil in a frying pan set to medium heat. Place the meatballs into the pan and cook on medium-low heat for 2 minutes, then flip them over and cook for an additional 2 minutes.
3. Turn off the heat and carefully remove any residual oil from the pan. Pour 1/2 of the glaze into the pan and bring the heat back up to medium. Fully coat the meatballs in the pan until they have a delicious shine to them.
4. Gently stick 2 meatballs onto each skewer and enjoy!

Edamame and Corn Skewers:
1. Add the edamame and corn into 1/3 of the meat mixture and mix well. Divide the mixture into 6 pieces and shape them into nuggets.
2. Warm the sesame oil in a frying pan set to medium heat. Place the meatballs into the pan and cook for 3 minutes. Flip them over, place a lid on the pan and cook the meatballs for an additional 3 minutes.
3. Turn off the heat and carefully remove the meatballs from the pan. Wipe off any excess oil from the pan with a paper towel, then pour in 1/2 of the glaze. Return the pan to medium heat and allow the sauce to simmer until it becomes a thick glaze. Place the meatballs back into the pan and coat them with the glaze.
4. Then gently stick 2 meatballs onto each skewer and enjoy!

Spicy Skewers:
1. Divide the remaining 1/3 of the meat mixture into 3 pieces and shape them into long cylindrical shapes.
2. Warm the sesame oil in a frying pan set to medium heat. Place the meatballs into the pan and cook for 3 minutes. Flip them over, place a lid on the pan and cook the meatballs for an additional 3 minutes.
3. Remove them from the pan and gently stick 1 meatball onto each skewer. Mix together the gochujang and mayonnaise in a small bowl and spread the sauce on top of each skewer. Top with some finely chopped green onions and enjoy!

Chicken Teriyaki Meatball Skewers | 照り焼きの鶏つくね

材料(各味3本ずつ)
❤玉ねぎ(みじん切り) 1/2個
❤鶏ひき肉 400g
❤塩 大ひとつまみ
❤パン粉 大さじ6
❤卵(割りほぐした) 1個
❤おろし生姜 小さじ1/2
❤お酒 大さじ3
❤醤油 大さじ3
❤みりん 大さじ2
❤砂糖 小さじ2

青じそ鶏つくね用
❤青じその葉 6枚
❤ごま油 小さじ1
❤竹串 3本

枝豆とコーンの鶏つくね用
❤枝豆 大さじ3
❤冷凍コーン(解凍した) 大さじ3
❤ごま油 小さじ1

辛い鶏つくね用
❤ごま油 小さじ1
❤ゴチュジャン 大さじ1/2
❤マヨネーズ 大さじ1
❤ネギ(みじん切り) 少々

作り方
①玉ねぎをボウルに入れ、電子レンジで1分30秒加熱する。冷ます。
①鶏ひき肉と塩をボウルに入れ、練る。パン粉、卵とおろし生姜を加え、よく混ぜる。玉ねぎを加え、混ぜる。たっぷりの塩コショウで調味する。
②3等分に分け、以下の指示で3つの味を作る。
④たれを作る:お酒、醤油、みりんと砂糖を小さなボウルで混ぜ、別にしておく。

しそ鶏つくね:
①肉1/3量を6等分に分け、小判型にまとめる。青じそを1個ずつ巻きつける。
①ごま油を中火にしたフライパンで熱す。つくねを並べ入れ、中弱火にし、2分焼く。裏返し、更に2分焼く。
②火を止め、フライパンの余分の油を拭く。たれ1/2量を回し入れ、火を中火にする。つくねの全体にとろみがつき、つやがでるまで煮からめる。
④竹串に2個ずつ刺すと完成です!

枝豆とコーンの鶏つくね:
①肉1/3量に枝豆とコーンを加え、練る。6等分に分け、小判型にまとめる。
①ごま油を中火にしたフライパンで熱す。つくねを並べ入れ、中弱火にし、3分焼く。裏返し、蓋をし、更に3分焼く。
②火を止め、フライパンからつくねを取り出す。余分の油を拭き、たれ1/2量を加える。 フライパンを中火にし、とろみがつくまで煮詰める。つくねを戻し入れ、たれにつける。
④竹串に2個ずつ刺すと完成です!

辛い鶏つくね:
①残り肉1/3量を3等分に分け、棒状にまとめる。
①ごま油を中火にしたフライパンで熱す。つくねを並べ入れ、中弱火にし、3分焼く。裏返し、蓋をし、更に3分焼く。
②竹串に1個ずつ刺すと完成です!ゴチュジャンとマヨネーズを小さなボウルで混ぜ、各つくねにかける。ネギを少々飾ると完成です!
