Capricorn Sea Goat Cupcakes|山羊座の山羊のカップケーキ


Cupcake Batter:
½ cup unsalted butter, room temperature
1 cup sugar
½ tsp vanilla extract
1 tsp coconut extract
3 large eggs
1 1/2 cups all-purpose flour
½ tsp baking soda
½ tsp salt
¾ cup buttermilk
blue food colouring

2 cups unsalted butter, room temperature
1 tsp vanilla extract
5 cups confectioner’s sugar
2 cups shredded coconut
12 soft caramels
24 toothpicks
12 large marshmallows
black decorating gel


Bake the cupcakes:
Beat the butter and sugar with an electric mixer until pale and fluffy. Add the vanilla extract, coconut extract and eggs one at a time. In a separate bowl, combine the flour, baking soda and salt. Add this to the batter in 2 additions, alternating with the buttermilk. Dye the batter pale blue.
Pour the batter into a cupcake pan lined with blue cupcake liners. Bake at 350F for 20 minutes, then cool completely.

Make the buttercream:
Beat the butter with an electric mixer until pale and fluffy. Add the vanilla extract and confectioner’s sugar one cup at a time, then beat for 3-5 minutes, until fluffy.

To decorate:
To make the horns, you will need 1 caramel per set of 2 horns. Roll the caramel into a long strip. Tear the strip in half, roll them out a little longer, then tear them in half again, creating 4 strips. Wrap 2 strips around a toothpick, creating a curly horn. Repeat with the remaining 2 strips to create a set of horns. Repeat to make horns for each cupcake.
Spread some buttercream on top of each cupcake, then dunk them in shredded coconut. Stick 2 horns into each cupcake.
To make the ears, use scissors to cut a marshmallow in half diagonally. Cut ¼ inch off of the flat side of each marshmallow half. Stick the marshmallows onto the cupcakes as ears. Draw the eyes and noses onto the cupcakes with black decorating gel. Enjoy!
