Bumble Bee Pork Buns | ハチさんの豚まん

Ingredients (makes 6 buns)

Buns:
❤ 270g all-purpose flour
❤ 1 ½ tsp baking powder
❤ 3 tbsp sugar
❤ pinch of salt
❤ 1 ½ tsp vegetable oil
❤ 140 ml water
❤ yellow food colouring
❤ 2 tsp cocoa powder

Filling:
❤ 160g ground pork
❤ 100g finely chopped cabbage
❤ 40g finely chopped green onion
❤ 1 tsp freshly grated ginger
❤ 2 tsp oyster sauce
❤ 2 tsp sugar
❤ 2 tsp sake (rice wine)
❤ 1 tsp sesame seed oil
❤ 1 tsp soy sauce
❤ pinch of salt and pepper

❤ wax paper

Directions
1. First, make the filling. Roughly combine the pork, cabbage, green onions and ginger in a bowl. Add the oyster sauce, sugar, sake, sesame seed oil, soy sauce, salt and pepper and mix until just combined. Cover with plastic wrap and place in the fridge for 1 hour.
2. Make the buns: using a sieve, sift the flour, baking powder, sugar and salt into a bowl. Add the vegetable oil and mix together. Then gradually add the water and knead with your hands until the dough comes together. Then turn the dough out onto a floured surface.
3. Remove 4 tbsp of dough and knead together with the cocoa powder until fully combined. Dye the larger amount of dough yellow with yellow food colouring and knead until combined. Cover the dough with a damp dish towel and leave for 30 minutes.
4. Divide the yellow dough into 6 balls and flatten with a rolling pin. Working with one bun at a time, place a small amount of the pork filling in the center of each circle of dough and wrap up and seal to create a bun. Place the buns seam side down on a floured surface. Repeat for the remaining buns.
5. Using the brown dough, create the eyes, mouth and stripes of the bees, and stick them onto the buns.
6. Cut out squares from wax paper, cutting one of the sides of the squares into wing shapes. Place each of the buns onto a wax paper square, and steam them on low heat for 15 minutes.

生地用
❤小麦粉 270g
❤ベーキングパウダー 小さじ1.5
❤砂糖 大さじ3
❤塩 ひとつまみ
❤サラダ油 小さじ1.5
❤水 140ml
❤黄色の食用色素
❤ココアパウダー 小さじ2

具用
❤豚ひき肉 160g
❤キャベツ(みじん切り) 100g
❤ネギ(みじん切り) 40g
❤おろし生姜 小さじ1
❤ウースターソース 小さじ2
❤砂糖 小さじ2
❤お酒 小さじ2
❤ごま油 小さじ1
❤醤油 小さじ1
❤塩コショウ 各ひとつまみ

作り方

①まず、具を作る。ボウルで豚肉、キャベツ、ネギとおろし生姜をさっと混ぜ合わせる。ウースターソース、砂糖、お酒、ごま油、醤油と塩コショウを加え、混ぜる。ラップにし、冷蔵庫で1時間冷やす。
①生地を作る。小麦粉、ベーキングパウダー、砂糖と塩をこしにかける。サラダ油を加え、よく混ぜる。水をゆっくりで加え、手で生地をこねる。小麦粉をまぶした調理台に生地を移す。
②生地大さじ4をちぎり取り、ココアパウダーと混ぜる。大量の生地を黄色の食用色素で黄色に着色し、こねる。生地を濡れた布巾にかぶせ、30分ベンチタイム。
④黄色の生地を6個に分け、めん棒で平らにする。各生地に具を少量のせ、生地を包み、豚まんを作る。綴じ目を下にし、小麦粉をまぶした調理台に置く。他の生地と同様にする。
⑤茶色の生地でハチさんの目、口と縞模様を作り、豚まんにつける。
⑥ワックスペーパーを羽がついた四角形に切る。豚まんをワックスペーパーにのせ、弱火で15分蒸す。
